I have a 360 with a moroso 8 quart deep pan. I know this is a stupid question but I want to make sure I am thinking properly. Shouldn't the total capacity be around 9 quarts including the filter? It only goes to add on my dipstick, I don't want to starve the engine for oil, but I also do not want to put to too much oil and have it whipping up in the crank. Thanks for any help!

Full level will still be the same regardless of the pan. I'd put the 8 in since you said it comes to 'add' and fire it up for 30seconds and get the pressure up. Kill it, and re-check it since the oil has flowed everywhere it needs to go, and fill it up accordingly. Just my 2cents.
 
I have the milidon 8 qt system on my car and I had to make new marks on my dipstick starting at 6 qts up to 8qts (9 with filter)
 
I run my Milodon pan with 8 quarts in the pan on the add mark with the filter full. I have always run my cars at the add mark (one quart low) when drag racing. It keeps the crank from whipping the oil which is worse than running a quart low. I have never had a failure doing this. I have even ran my stock pans one quart low which only left 3 quarts in the pan of a Stage 1 Buick I used to run in the early 80's. It ran low 12's and never had a problem. If you decide to run it a quart low you need to check your oil more often than if it was at the full mark because you don't have as much cushion when it gets low. I actually check my oil level everytime I go to drive my car.
 
Your stock dipstick won't read correctly for the aftermarket pan. Put in 8 quarts, run it long enough to get an oil pressure reading, shut off, add one more quart for the filter and then remark your dipstick to show your full mark. The aftermarket pan my keep the oil level below "stock" level, but it's also got baffles and an extended oil pump pick-up (I hope) to better manage the oil flow.
