I know by nhra rules you need a overflow can for the radiator. My question is can I plumb into my unused windshield washer tank and use that as a catch can?

I think you may be able to. Depends on how strict your track is, it'll need a hose clamp at both ends. I just bought a moroso can for mine.

I could add another can in my engine compartment if needed. I have a JAZ plastic one It's just that on the early a's there isn't alot of room to begin with and I want to try and keep it uncluttered as much as possible. Guess I'll have to try it and see what happens.
