160-180-195-none? Not a daily driver, just a sunny day toy. I have run without before and stock. I am not worried about how fast it warms up.

Not sure what good a thermostat is gonna do ya unless you install a fan and a radiator. Just kidding. A 180 will do you fine.
 
I think a 180* will do. A 160 can have it run on the cool side during not so hot days. Hot days it won't matter. I was running a 160* in my mostly stock big block (400) and the move to 180* improved drivabilty.

There could be a power edge with a 160*.
 
before installing the stat, drill a 1/8" hole in it. lets the air bleed out of the system.
 
The one I got has the relief for air pockets built in. The 180 should do just fine. Thanks for all the input, it is appreciated.
