What throttle cable stud do you have on the carburetor?
What throttle bracket are you using?
Those are the only things involved that I can think of to be factors unless I'm missing something.
take pics of your cable and your carb. I am pretty sure the stock cable can work. you just need the right bracket and stud on the thottle lever.
Using a TV cable too?

With a taller intake manifold you often have to buy a longer throttle cable. The guys at Mancini Racing or Hughes Engines will have what you need. They sell throttle cables, taller throttle brackets, tall throttle return brackets, etc. Everything you need to install aftermarket carbs and intakes is available from those two places.
