Im looking for an easy(cheap) manual transmission swap for my - 71 Duster. Could a 2000 RAM 5 speed transmission hold behind an 350hp 318??

Not easy- truck transmissions are big and bulky, and locate the shifter almost under the dashboard. You'd need to mod the torsion bar crossmember to clear it, and fab a trans crossmember to locate the new trans mount. Then you'll have to clearance the trans tunnel to make room for the truck bellhousing with an 11" 143 tooth flywheel, and make room for the hydraulic slave that sticks out the rear of the bell next to the trans. Which means you have to adapt a hydraulic clutch linkage... No, it's not a bolt-in. And when you're done, you've still got a truck transmission with truck gearing that shifts like a... truck.
Different models will require different extent of mods, but if you can find an AX15 you'll have something closer to what you want, although the torque ratings are still marginal, but with your relatively mild 318 you'll get away with it. Stay away from the NVs. Most people use the AX bell and flywheel to adapt a Toyota Supra 5 speed, which has higher rated torque capacities and better gearing. Do an AX15 swap search and you'll get some hits.
