I'd go 500 to 650 with an AVS2 or if you can find a good 750 TQ. 800 cfm is a little crazy on a 273. You have a 630 cfm 69 AVS right? Should work great on that manifold. The TQ works because it has small primaries and an adjustable secondary air valve.

I replaced the worn out stock carb on my 273 with a 600 AFB. It worked great right out of the box with no tweaking. Just idle speed and mixture adjustments.

340 Forged cranks are balanced for heavy forged pistons. If you use one with 318 pistons especially hypers, it's gonna cost heavy dollars to balance that up. IIRC those 340 pistons were around 719grams versus like 550 on the stock 318s. Hypers would likely be less. Save some cash, use the 318...

318 cams are wanting a bit. A 360 cam is likely going to perk it up a bit and still keep a smooth idle. A 340 cam may introduce a bit of lope to the idle. This is really where the tune comes into play.
