From the factory it would be mostly gray dip primer with color overs pray and the wheel wells undercoated. The easy thing would be to undercoat it all or paint it black.

I was certified with both Gtechnique and Ceramic Pro. I prefer the Gtechnique personally. Its really not that difficult to do. It does take time and if you do mess up its a nightmare to correct.

Even if someone made wider tubs there is still cutting and welding involved, its just as easy to widen the stock ones.

I use vinyl. You can peel it off later if you want. The tail lights on my Impreza are real dark. When the lights are on you cant tell they are blacked out.

You will be fine doing it in sections. You can scuff the epoxy if your planning on over lapping. You will also need to scuff the whole car before spraying the 2K. Make sure you read the directions.

AAR and Glassteck can both make hood with the scoops pre installed. I had AAR scoop which came with mounting studs already installed. It sat perfectly flat on the hood when installed.
