    Go buy a mechanical oil pressure gauge. It can be temporarily installed if you want. It will tell you what your issue is.

    Not sure if I missed it, but what carb are you running? Holley carbs are very sensitive to dirt. Make sure you have all the old fuel out of the carb , fuel lines, and tank.

    If it starts, or tries to start, then dies when you let go of the key, it's the ballast resistor.

    Try pulling one plug wire at a time. If the sound changes, it's probably internal. Rod or wrist pin. When you changed the oil, was it really thick? Could be the previous owner dumped some motor honey in there to keep it quiet.

    The tires spinning in neutral while on jackstands is normal. Check the temp with another type of gauge. Mine looked high on the stock gauge, but when I hooked up an autometer it was 170*
