I've heard heads are interchangable for 318 and 360. What about the 340?

Well yes and no.
A early 2.02 340 head wont fit on a 318 unless you notch the block. Intake port sizes vary too depends on year and application. All newer magnum engines have diff valve train hardware etc. However they can allbe made to work for a price...
But a large port 4B 360 head that is opened up will work fine on a 340.

They do, but there`s a lot of variables, like port matching, valve clearances, and compression changes, etc.
