looking at two 375 HP crate motors. Same setup except for camshaft, both have Hyd Rollers.
One has a 230/234 @.50 108 501 lift while the other has a 208/216 467/482 108

can someone help with some info on what performance changes there would be between these two cams?

Really? The same HP with a near stock cam and a mild HP cam? Hummm.
Any head work listed on the engines?

The smaller cam should provide mad low end grunt while the HP street cam should start to make power at or around 1800/2000, Just by the numbers of course.

Times two. Looking at the Indy ads, looks like a Indy built long block. Compression 9.5 to 1, the smaller cam spec's above/, Indy's MA-X /RHS 1.92-1.62 valve heads. Those RHS flow a lot more, than stock Magnum heads. The other cam, looks like the 380/360 Magnum spec cam. Just a bit more rowdy, than the smaller grind. Probably needs at least a 3000 stall/3:70 or higher numerical gears. (the bigger cam,J.M.O.)

There ya go! The heads make a big difference.

Indy X steel heads> 230 & 208 man those seem like low duration numbers. It's been a while for me but Im used to 280- 292 HYd cams with 509 lift.

AHcuda! His numbers are at 50thou lift. Your numbers are advertised duration which in most cases are measured at 4 thou lift.
