Need suggestions re: my 1963 Dart, rebuilt 225 with a Holley 1920

Was running great, rolled up to a stop sign and it suddenly started running bad - gasping and sputtering - and died... restarted and instantly ran great, as if nothing had never happened. My mechanic confirmed the points looked a little crispy so we did a points and condenser swap + tune up, which was overdue anyway. Checked the vacuum lines and they look fine.

However now it’s still the same, runs perfectly then out of the blue it will run very rough and die, but immediately starts right back up and runs smooth.

Trying to figure why restarting “resets” whatever is causing it to momentarily go haywire before it then goes Ker-Plunk. Currently thinking the 1bb Holley is due for a rebuild, but perhaps someone smarter than me has an idea before I go down the rabbit hole...

I went thru 4 rebuilt Holley 1920 in my 1969 Dart before I found one which made it idle like a kitten. Apparently, all the others had a clogged metering block, which is sealed and hence not normally rebuilt. The others would idle rough (running lean) and sometimes stall when leaving a stop light, so had to goose the throttle.

When I had a collapsing suction hose in that car, it idled fine but would start stuttering at higher fuel flow >55 mph.
 
If you rebuild the carburetor without cleaning the source (tank) you're pissin in a fan. These tanks are OLD and sediment and rust have likely built up over time and need to be cleaned out. I recommend removing the tank, taking it to a competent radiator shop and letting them clean it. Remove the carburetor, take it apart and inspect it for dirt and sediment in the float bowl. Remove the fuel filter. Blow out all of the fuel lines with compressed air. Put the clean tank back in. Put a new fuel filter on and clean the carburetor and put a new (not NOS) kit in it. Daytona Carburetor has ethanol friendly kits with good instructions.
