What color should the intake and exhaust manifolds be? I know it’s red but are they both red or is the exhaust a “cast gray “ color?

No sweat. Slip plate works great on exhaust manifolds also and lasts years!
According to Ulf @65dartcharger exhaust manifolds were installed during engine assembly and were painted mostly where they were bolted to the heads. Likely 99% of us will leave them natural and install them after the engine is psinted

As I understand it, the exhaust manifolds were on the engine when it was painted. The manifolds were not specifically painted, but the inch or two or three next to the heads got engine paint on them. That paint would burn off in just a few minutes running, so basically they ended up unpainted and were soon covered with surface rust and were brown. Not especially attractive that way, so most today paint them with some kind of high temp silver/gray exhaust paint.
