If a 8.75 ring and pinon with a limited slip is properly set up, how easy should you be able to turn the yoke by hand (axles installed) ?

Gear mesh pattern and backlash are the two key bench indicators for determining if a differential is set up properly.
There is also a torque to turn target but that is for setting the pinion bearing preload.
 
It depends on the hands turning it. My son turns them with ease with one hand. I need to use two hands. My wife needs a pry bar.
 
With drums off or NO brake drag, it should be relatively easy.
 
Gear ratio determines the force it takes if turning the axles. 456's turn hard at the axle but easier at the yoke . 276's turn easier at the axle but harder at the yoke. This is with the rear together the drums off cold and with gear lube in the rear.
