My 1969 Dart GT has been converted from drum to disc brakes. Still a work in progress. I do not have the backing plates. Can I get by without installing backing plates? Thanks

Sure you can. The brakes will actually get better air. But...... they will be more exposed to grit and grime from the road and also rain and snow.

And when water gets between the pads and the discs, or the rotors get wet, braking wil be a screaming bad time. So dont drive it in the rain. Hope you dont live in the coastal provinces, lol
