A 750 Proform will work great and is one of the cheapest carbs on that dyno chart and was ahead of the game up to 3400 rpm...The bigger the carb the more power you can make but where in the power band is important to the kind of driving of the vehicle and whats most important to the owner.
I use a 750 Proform on my 318 and it runs great...
I even used a new 850 proform and it to ran good also ...but at lower rpms the engine was not as smooth, due to the fuel not being atomized enough..
BUT...at full wot power it ran great...you would never know it was a 318 with a 850 cfm carb on it
Knowing how to tune a double pumper carb-- and having all the replacement parts-- helps a lot.
