my 340 is coming out and a magnum block 408 going in. Would torque settings for things like headers, flywheel, water pump and such be the same between the two?

Also, my Schumacher motor mounts sit offset. Is that normal?

if attachment sizes are the same I would aspect torques to also be very close ,and would also not be surprised if that mount is correct, but that is just a best guess

The mounts are supposed to be like that and will adjust some with the 400 pound motor sitting on them.
If you are using a torque wrench on any of the things you mention other than the flywheel....you're over thinking it.
