When I bought my 73 Dart 340 Sport four speed new in 73, I had a 3.91 Sure Grip. The noise drove me crazy on the interstate, and I was a young guy then. Now, I've just finished building another 73 Sport with a better 340, 3.91 gears, but this time a 200-4R OD trans. I'm much older and don't want that noise anymore. Just my 2 cents.
 
I have 3.91 on a locker in my bracket/street car, cause it was just as quick as with the 4.10 and 4.56 that i used to have in it.
OP, read this again. I've seen this many times - all you get from going too deep is more engine noise and worse fuel mileage.
My big-cam 451, 4-speed, 295/50R15 tires, likes the 3.91 for mixed use. 3050 rpm at 60 mph is tolerable since it's not daily driven, and I can live with 9 mpg highway. And the cam is just coming on at 3k.
As has already been said, it all depends on the intended use of the car, the engine, the cam... no one right answer.
 
With lockup, 3.23 is right at the edge of my comfort zone. I could probably go with 3.55 and live with it, for as little highway driving as I do. Though, the occasional two hour drive to Cleveland on the interstate warrants the use of 3.23s. Give me an overdrive and I'd go 3.91 or 4.10.
