Totally depends on the cook and the species. A lot of folks make jerky out of Geese. My Dad however can prepare it in a way that you want seconds. I on the other hand can prepare it where it is edible and fine for a plate but ya typically don’t want seconds!Very nice. I've never hunted waterfowl. How are they for eating?
Funny story about cooking Duck, as most on here know the men in our family are the primary cooks. No different at our house I do the cooking day in day out. I really like to cook and have attended many culinary classes for this and that. One such class was on cooking Duck, it was at a swanky restaurant on the Oregon Coast. The class was great, but as the Chef was preparing the Duck, the breast was huge and he was slitting it to stuff and putting some perforations in it for flavor enhancing. I raised my hand and asked where he got the duck as I had never in my life seen a breast so plump on a Duck. He remarked they all looked that way? I replied I simply had never seen one like that, his helper whisper in his ear. The response was classic, the Chef was aghast. He looked right at me and accusingly asked “you shoot them”. Yep he never looked at me or spoke to me again.I've had domestic duck and I love it. Never had wild duck.
