I just don't get it..

Lots and lots and lots and lots of vehicles used to run hundreds and hundreds of miles before everybody had catch cans, and most of 'em didn't puke water out all the time.

Exactly and thats how the factory shipped em in 1967 , puking cold is probably a bad cap or a deformation / obstruction in the area the cap seals to . Address that and let the water level stabilize to that 1/2 inch below level and you should be good to go .
 
i chased around for a cap that would work in my original radiator 68 RR, tried about 4 different brands would only have some PSI when it got very hot and that was hit or miss even had the later style 72 mopar one on there, Do yourself a big favor and try the repo ones they sell, as soon as i tried it, it held PSI just fine even after about 5 min run time way better than the part store ones.
