Salmon, that is. I have fillet about 30 chinook jack salmon this year.. Most of it will get smoked, but Cori makes the best baked salmon imagineable. Most people seem to over cook it which makes it much too dry. When cooked properly, salmon is one of my favorites.

My smoked salmon recipe is not complicated at all. Just a dry brine of salt (non iodized) and brown sugar. There are so many other variables that people use, but I like it simple, and just like the baked salmon, don't over cook the smoked salmon either. It's got to come out of the smoker while it is still moist.

My wife vacuum packs it and then freezes it in handy snack size packages. Think I'll have some now..:D

Man, I love them smoked, really the only way I do like salmon. I get rainbow trout around here, and I smoke those too, they're so good you can't sit still and eat them.
 
Your getting my mouth watering. The kiss principle seems to work plenty good with food doesn't it. Good looking salmon there.
