I had the 1969 Dodge Dart 273ci rebuilt. When that was done, the A/C was removed. When you remove the A/C, does that cause the fan switch/motor not to run?

I guess you mean the heater blower control. If it worked before, it could have been wired in such a way that it won't work now simply from removing the evaporator. Pics of what was removed and the interior under the dash (left over wiring) might help if you intend to fix this yourself.
 
When you say the AC was removed do you mean the under dash unit and the engine side components?

Or just the engine side components?

The heater controls should not need the engine side work EXCEPT it probably needs a vacuum signal to open doors and such. I would suspect that some wiring got disconnected.
 
Under dash A/C parts are still there. Just the engine parts.
 
Get out your factory service manual and wiring diagrams and see what is not connected
