What do you guys think is the best way to protect a vehicle from rusting? I'm concerned mostly with how to protect the back of panels and the inside of spaces like behind the quarter panels, etc.

Check out the product from Eastwood in this link it is supposed to be good. The link is to the ulitmate performance car site which is Canadian and they carry all of Eastwoods products and they have other rust solutions as well.
They also carry most parts for my 70 swinger so it cuts down on shipping and duty from the U.S. I have found these guys great to deal with;

ruber under coat is a great rust stopper and sound deadener

they make a weld through primer that is designed for just that purpose, spray the back before you replace them
