Would anyone know what the required pinion depth from centerline of traction unit would be on an 8-3/4" with 3.73 gears and new bearings?

Is there anything marked on the gears? Do you know what shims were in there before it was taken apart? If you don't know, you could guesstimate but you will go through some trial and error to get it right. Get a checking bearing.
Any suggested numbers are only for a guide to get you close. The only way to get it dead right is to get the pattern correct.

Each 8.75 uses a different depth also

if the pinion is not marked with depth it should be plus or minus spec on it(ie factory gears) then you go by that as the change from the factory zero dim which is 2.764 if memory serves.paul
