Paint and dynamat or similar. If you decide to undercoat, I would look for a spray on bed liner material that doesn't get too brittle and remains somewhat pliable.

Not a daily driver. This is a resto play-toy and will never see salt or snow again if I can help it.How much driving do you intend to do and in what conditions do you drive in?
Show car or go car? Speaking for myself protecting the steel for as long as I can is the goal for the long haul! PS i found it very easy to remove the original undercoating so that might be the way to go...
Waste your money if you want. But Lowes sells good old Rustoleum oil based paint for 27 bucks a gallon. Properly prepped and applied, it will out last you.
