Is it a good idea? I used a headlight kit, but I wasn’t sure if the sealing step was a good idea for a gauge lens

Isn't the sealant for UV protection so the headlights don't yellow?
I suppose you could use it but the gauge lenses aren't exposed to the same elements as headlights so you could leave it too.
If possible try on a small area that isn't visible if you are concerned that it will react with the lens in some way.

Yes, that is what the instructions said. UV protection from yellowing.
