Should I bore a 74 318 to 340 ci or just go with a 360?

Op's thoughts are all over the place. He needs a more realistic vision of what he wants to accomplish. He wants hi revs, more torque, #'s matching & fuel economy on a budget. Don't we all?.. And all out of a 318! Let us know how you make out with that...
 
Why not? Stroke being equal in a 318 you get 97% of the piston area that a 340 has. That's the only real difference unless you want to talk about heads and breathing. Toss the same aluminum heads on each engine and the same cam, and carb you should be able to develop about 2%-3% more power with the 340. Doesn't really seem worth it. If you do want to use the original X-Heads on a 340 it's up to you. Forty year old technology will guarantee a loss to a 318 with magnums or Eddies.

What makes you think you can build a 318 to make more power than a 340 for less money?
 
I once took a 318 truck block out to 360 cubes by boring it to 4in bore and using a cut down 360 crank. Basically it was a 360 engine inside a 318 block.

Before you ask why, it was done to fool the registration authorities who would only allow a 318 cuber in the vehicle I was building at the time. As far as they knew it was a 318. :)

But this was done before cheap 4in stroker cranks hit the market. Nowadays i would go for the 390 option if I wanted to use a 318 block.

you got registration people who can tell the cubic inch of an engine by just looking at it...they are pretty good...where do they get their x-ray vision glasses at?

The engine number tells them what the capacity is supposed to be. Obviously they can't tell if there's a stroker lurking inside.

I should point out, that this is in Australia, where our laws would differ greatly to those in the US
