stainless vs steel valves

what is the advantage of stainless valves over steel ones, i can't see them being any stronger - is it better flow somehow or less prone to deposits?

what material are they usually made of - is it a heat treated 300/400 series or something like a monel or inconel ?
 
No, they are stronger outright, they are one peice where steel are two, and they are not as affected by heat. You basically have factory valves, which in Mopars case will be tulip design with no back cutting, and two peice, and stock lock grooves, or you have stainless performance valves for very similar cash.
