Im running a 360 with a M1 intake. What does the 1" hose that runs from the water pump to the intake do? Also do I need it? This is a strip car with minimal street.

By passes the t-stat I believe and you're probably not running one. I don't know
if you really need it. Some other folks may chime in with the correct answer.

my understanding is to pass water under the t-stat to help it open. I plugged mine off on my street stroker, runs just fine...

Its the coolant bypass hose. It keeps the water circulating in the block when the thermostat is closed, so the pump doesn't cavitat.
