A procedural change at the local hard boiled egg factory

If I could put cilantro on deviled eggs, I could power my car! Some serious winds from cilantro for some reason. I love egg salad, could eat it right out of the bowl, but I hate mayo?
 
Roll the egg in your hands until it's all cracked then start pealing from the large end and get under the protective layer. To cook I put the eggs in the pan/water bring to a boil for one minute then remove from heat and let rest for 8-10 minutes(I go less for softer) then the cold water at trickle just to keep the eggs cool. Work great for pealing most of the time. Paprika on deviled eggs or even smoked paprika tastes great.

I have 12 pullets at 14 weeks, out if the six old the six old hens two are still laying regular(5 yrs old) can't wait for this next group to start. Nothing beats fresh eggs on the weekend for breakfast(except a fork maybe). My Mama said the yokes were Perky cause they stood up so high.

I whip up an egg casserole now and then.
Sort of like an omelette

The leftovers I put in tupperware containers and freeze them for the lazy mornings.
 
One of my former employers called my wife and begged her not to make me egg salad sandwiches for lunch ever again. :icon_fU:

These days I like scrambling 2 eggs and some bacon bits together in a small bowl, microwave them for 45 seconds, then 45 seconds again, put a couple pieces of mozzarella or marble cheese on a piece of Naan bread, microwave that for 30 or so seconds, place the eggs on the Naan, add a little bit of ketchup and make a sandwich. Yum.....
 
Deviled eggs are great! Plus, pickled eggs (like @fratzog lover ’s wife makes) are delicious! Pickled eggs are made by soaking hard boiled eggs (de-shelled) in beet juice for a long time. I think they are an old PA Dutch thing.
 
I've always heard older eggs are the easiest to peel. The air pocket is larger in them than when they are super fresh.
 
Never had a gas issue after eating boiled eggs...

I make egg salad but with mayo not miracle whip...don't like the vinegar.
 
I make deviled eggs with pickled eggs and a wasabi/mascarpone/yolk filling.
I peel them by putting one in a cup with some cold water in it. Shake it with your hand on top and the shells break apart nicely and water gets behind some stubborn parts. Too hard of a shake will rip the albumen, but it sure beats trying to chew if off tiny bits of shell
 
I dont mind egg salad... kitchen smells like *** when they're being made tho...

I love all things eggs. I go through four dozen fresh eggs every three weeks by myself. Get them from a friend With a farm a lot cheaper than the store. Taste better too.
 
Del, do yourself a favor and buy an egg cooker. My wife fought with peeling eggs for years and tried every trick under the sun. Bought a 6 egg version (even though we have two chicken barns, we don’t eat many eggs) of a cooker like this and the eggs peel flawlessly every single time.

I just saw an ad on TV this morning for a microwave hard boiled egg cooker :realcrazy:. A little water, nuke it, shake the tar out of the cooker and peel :lol:

Brought a flat of eggs in from the barn and currently have 6 in our small egg cooker. Once the water is all evaporated and the buzzer goes off, I’ll rinse the eggs in cold water, then peel them for egg salad. I’ll post pics of the eggs once they’re peeled. Keep in mind, these eggs are fresh. Like, laid in the last 3 days fresh. I’ve always heard that older eggs tend to peel easier, with this cooker, it doesn’t make a difference how fresh or old they are

I never had an issue peeling boiled eggs, but I hear 'older' eggs are harder to peel for some reason. Fun fact: raw eggs can hold for weeks in the fridge. If you think they are bad, put them in a cup of water. If they float, toss 'em.

Its actually opposite. Fresh eggs are really hard to peel if hard boiled. The reason is the eggs in the store can be up to 2 months old by the time you buy them. In this time they slowly dry out which separates the membrane from the shell and this is what makes them easier to peel.
Another fun fact is you can keep a fresh egg out on the kitchen counter for weeks without refrigeration.
I have chickens so I haven't bought eggs in 5-6 years. My girlfriend buys eggs because she likes hard boiled eggs and the fresh ones just don't peel reliably.
 
Ok. So here is 4 of the 6 eggs that I cooked. One had split open in the cooker due to not properly venting out of the small hole you poke in the shell One stuck to the shell a little bit and tore 2 chunks out of the white. And the third I caught the tip with the spoon I was using to peel it. As you can see, the 4th is perfect and the 2 not pictured also turned out perfect.

Here are the other two. Keep in mind, these eggs were laid this week. And as @MoparMike1974 stated, fresh eggs “usually” SUCK to peel when hard boiled. This little egg cooker is the best thing you can get if you ever hard boil eggs.
