The few times I used gas I had just the opposite problem TOO MUCH HEAT.

I had that problem last year, changed the pressure regulator {part of the hose} it works fine now.
I bought a Pit Boss a couple years ago and have had much success. It has a sear plate (trap door) over the fire box so you can sear steaks and burgers. Mine is a 700 model and cost about $300. Here's some samples. Hungry yet?

Been meanin' to try somethin' like that
Easy peasey. A pouch of pizza crust mix, a small jar of pizza sauce and toppings.
Simple stuff like baked beans or meatloaf is so tasty. Smoked mac and cheese is a hit as well.
I was as nervous as a ***** in church when I smoked my first brisket. A $45 piece of meat and what if I ruin it? It was fantastic!

Bloody wind is at it again. Opened up the lid on the BBQ pit, wind decided it was havin' none of that. Lucky I still have all my fingers.
