We have been experimenting with canning pico for a couple of years now. We have really not established a good way to keep the heat. When we open a new jar we just add some fresh jalapeños and it is better. But man it is a lot of chopping. I have tried food processors etc but in the end I like hand chopped the best.Yep. I switched to thick cut slab bacon from the butcher counter. Better quality and you can "see" what you're getting

So, I just found a complete 1937 ford front suspension about an hour from here. Came off a running, driving car so fingers crossed it is ok. Going to go get it on Friday morning.

I gave them a bag of tomatoes yesterday. we have a 2 grape tomato plants. One on the deck probably gave 50 tomatoes so far. One in the garden I'm sure I picked well over 100 and still going strong. Should get at least that again. Plus the regular 'Big Boy' tomatoes are getting ripe -a few every day. I like all kinds of salsa, but fresh onions kill me, plus the acid in the maters...so gotta go easy on that stuff.
Actually just had some from a neighbor. Not as much flavor as the red, but pretty good. I think these grape tomatoes are a little less acidic than the bigger ones as well.
Makin me hungry!!I ashamedly admit I do not have a garden so I buy my tomatoes and bacon at the grocery store. But I do like me some nice BLTs. Lol

Well. Home. Got back about 145 last night. Long drive. Yesterday. Winnamicha Nevada to Boise Idaho with 48 ft trailer. Then Boise to phalan CA. Then phalanto vista.

Onions I use a combo of red and green I likes the colors
Garlic finely chopped
Peppers I prefer Anaheims canned Ortegas or fresh and a couple Serranos chopped up for that heat
Cilantro that green weedy lookin' stuff or if you can't find that coriander, exact same stuff but dry
Salt
PS Using Grilled Anaheims is a real taste treat
