Make some stew out of it...

Boil the meat off the bones, then strain and keep the liquid for broth after you pick out all of the bones...

Then put it in a pot or crock pot, add carrots, potatoes, onions, celery and let it simmer for a half day... (use other veggies and seasonings as well)...
