Do they make a plate that blocks off the opening where the manual choke goes? Or, can I modify a choke to just plug that up?

I think 6 is the bracket to hold the two heater hoses in place.

I don't think it has to seal either, Just a cover?
Might keep the heat down . I see they sell gaskets with the billet one , probably won't be an issue.
4 is manifold vacuum 6 is AC pump mount.

I thought number 3 was vacuum port
It's threaded top to bottom, but doesn't go anywhere.
Read a few threads on here, so it's unclear of what exactly it was for....
Other's may have more understanding
