It did start developing a light covering of salt crystals about 2 weeks after I got it and it has shrunk in size since then making it harder and chewier, but it still seems to be good. Just ate another piece now.
 
Maybe it's because it's in the cabinet with the dry pasta and rice. It could be desiccating it making last longer. Kinda like why you put some dry rice in the salt shaker to keep the salt from becoming sticky over time.
