You wouldn't happen to have a couple pictures of your set-up would you?Like these guys said. Use the plate type. I run running two of them instead of a single one for fitment reasons in my '68 Barracuda.
Instead of a thermostat, I use a pair of small ball valves to bypass the coolers in the winter or when I'm just making short trips around town, so the radiator can put some heat in the fluid.

Regarding the lines, i used to slightly flare the ends of the cooler lines to allow the robber hose to hang onto the ends better, but I have since switched to a compression fitting style of end with a hose barb on it.
Be sure to tighten and loosen the compression fitting end of it several times to allow it to seat onto the steel line. I suspect stainless steel lines would even require more of this process to get them to seal reliably.
