Steel siding is the way too go. Strong pre painted resists moisture easy to apply, meets fire code for ceiling win win. Only drawback is cost for roofing it’s double what shingles are but never have to replace it EVER, bounsWow! Seen that only once or twice in my life....
Somewhat off-topic, but I've been going back and forth about what to do with the ceiling in the "shep" next year: Leave it open and use the rafters for storage, or put-in a ceiling and leave the attic alone (just insulate it). Given the snow load seen here, and knowing that we can (and have!) had similar in the past, I may just close-off those rafters after all.
