160 is too cold. It will most likely stay open, defeating the purpose of a thermostat. It needs to be an open door, closed door EXCHANGE system.

Usually airflow at idle, I am running a MP viscous fan, and factory shroud. My rad is a hi efficiency copper/brass core(3/8" on center tubes as compared to stock is 1/2") and it also has a dimpled tube core.

EVERY thermostat I've installed over the last forty years opened "against the flow" never had a problem with them? All have been stock auto parts store thermostats. Care to expound on your theory?

Yes. Research has shown that high volume water pumps can actually increase pressure enough to push a t Stat closed. Plus the quality of Stant and others has diminished over the years. In my hot rod shop, we had countless failures of regular thermostats. Switching saved me a lot of time and money.

Interesting. I bought the high volume Milodon water pump for my stroker.
 
BTW, if you go waaaay back to some really old FSM's (in the early 60's and maybe further back), you'll find that the 160 F t'stats were used with the old alcohol based anti-freezes, and the 180F ones was for that 'new fangled' glycol based anti-freeze. (I have assumed that the lower temp was used with the alcohol based AF to keep it from boiling or evaporating away but that is just a theory.....)
 
Here's the Milodon thermostat on Summit.

Also, the "Balanced Sleeve" design equalizes the pressures exerted on the thermostat. This counters the undesired effect of increased flow from a high-volume water pump, which actually tends to hold a stat closed.
