Cook temp? internal meat temp? Wrapped with foil or not?

Cook temp? internal meat temp? Wrapped with foil or not?

The grill surface thermometer said 250 degrees, the grill hood temp said 275 degrees. I think I should be careful where I put the grill surface because it's indirect heat cooking and I placed it too close to the active burner. Maybe should have placed it halfway down the brisket, then would have realized cook temp was low. Placed brisket in the oven at 230 degrees, wrapped. BTW I had the meat thermometer poking out of the foil, placed into the thickest part of the brisket.

If you cut into it to check it... its not done. It's done when it pulls apart with 2 forks.

Sitting in my chair in far north Idaho with the fire lit and sipping a Gordons martini. Son and DIL are heading out tomorrow AM after their honeymoon here over the past couple of weeks (without us...). They hiked, ATV'd and fished for the duration.
