Canned corn
Mayo
Cojita cheese
Tajin
Lime

Mix a bit of mayo, lime juice and cheese. Add corn, mix.

Sprinkle a little bit of cheese, cilantro, and lime.

Eat and enjoy

My brat wasn't very specific with her recipe there :lol:
I'll hafta find a source for that cheese and Tajin spice, I've never seen or heard of either before :lol:
It does go well with a Tri Tip sammich :D
 
Hey WTF, I am retired! Dave Johnson is a wine and spirits manager from a city south of here. He does a lot of real good barrel picks. His last release was a 119 proof Yellowstone bourbon. He messaged me a half hour ago about what I was nosing and tasting so I poured a bit and went at it. Peaches early turning dark with time in the glass. Almost apricot now. I get some butterscotch and pecan or almond. If you are from Boston that would be
buttah peek-un! LOL What a way to start the day. Fruit juice!

I found a real recipe for that stuff

Ingredients​

  • 2 (15.5 ounce) cans whole kernel corn, drained


  • 4 tablespoons mayonnaise, or to taste


  • 4 tablespoons grated Parmesan cheese, or to taste


  • 4 teaspoons chile-lime seasoning (such as Tajin®), or more to taste


  • 1 lime, or more to taste

Directions​

  1. Heat corn in a skillet over medium heat until steaming, about 5 minutes. Remove from heat and drain water.

  2. Fill several cups or mugs halfway with the corn. Add 1 tablespoon mayonnaise, 1 tablespoon Parmesan cheese, and 1 to 2 teaspoons chile-lime seasoning to each cup. Squeeze lime juice on top.
Brat in law did not heat the corn at the BBQ Fest, just mixed it together after draining the corn .

This Yellowstone is fun stuff. It keeps changing, Not overly complex but it changes throughout an hour's time in the glass. Peach, toasted oak, baking spices, butter scotch, pecan. It's all in there, it just shows up at different times. It is pretty complex for a bourbon actually.

If you have a Hispanic section in your local grocery store, or a strictly Hispanic grocery store nearby they may carry it. around here that is where I pick it up at least.

Got some work in the shop now. Have a Mercedes-Benz that needs a window regulator and motor. That's in the works now. A Church friend just brought me his 2011 Cadillac. Needs brakes all the way around and an ABS or speed sensor. My neighbor just called and wants an oil change. It's either nothing, or all in at one time here... :lol:
