Sounds like it's working. I smoke at about 160° and that can be adjusted but I always finish at 200-225°. At that temp, Baby Backs usually take 4+ hours. Right now, they’re wrapped and have a dry rub, plan is for BBQ sauce around 12-1230Sounds like it's working. I smoke at about 160° and that can be adjusted but I always finish at 200-225°. I have got to get some wheels on my black Hemi Express that I can put Moon Discs on I had Moonies on my GMC before the Express. The OE cast wheels are not suitable for mounting the Moonies, too uneven at the rim even for the screw mount variety

Plan was just to do one but when I thawed them, I discovered the butcher shop wrapped both racks together so I decided to give it a go with bothMy wife spent a year perfecting her ribs recipe. She is careful to peel the silver skin off the back and uses a liberal dose of white vinegar to tenderize the meat.. Does 2 racks mean there is some left over? lol
