I’m watching it with a meat thermometer so we’ll See how bad I screw JT up
I did a brisket in my little Brinkman charcoal smoker at work one Friday for a Christmas party that night. Started at like 03:00 before the rest of the rockheads got in. The aroma really started getting around. By the time it was time to take it off the fire and go home, I open the lid and I'll be damned if 1/3 of it hadn't mysteriously disappeared :lol: The rockheads paid for that little prank for quite a while :rofl:
 
It's what they're paid to go over and the merchandise they sell all year. Just another $$ market for NFL and owners/players.
Oh I know that. I fully get why they do it. Still doesn’t change my mind on it.
 
Good, I’m running one burner on the lowest setting right next to the smoke box.
Sounds like it's working. I smoke at about 160° and that can be adjusted but I always finish at 200-225°. At that temp, Baby Backs usually take 4+ hours. I smoke for 2 hours, wrap for 2 and unwrap and sauce for an hour. (if you choose)

Players would get killed with taxes. They wouldn't make as much as the footballers..and travel costs would be stupid

Right now, they’re wrapped and have a dry rub, plan is for BBQ sauce around 12-1230

My wife spent a year perfecting her ribs recipe. She is careful to peel the silver skin off the back and uses a liberal dose of white vinegar to tenderize the meat.. Does 2 racks mean there is some left over? lol

We’ll see. Plan was just to do one but when I thawed them, I discovered the butcher shop wrapped both racks together so I decided to give it a go with both
