I have another roof but sure didn't want to try to put it on because of lack of skill
 
So if I cut all of the spot welds out do I have to brace the car up to keep it straight to just put the roof skin on

I'd still brace the car up, but the inner bracing should hold it straight. The hard part of replacing the roof skin is all the spot welds in the gutters above the side doors and rear side windows. I'll get you a picture of what I'm talking about.
 
Lots of spot welds in the gutters and hard to get to. I've done it a lot but no fun. You can use structural adhesive and glue it on and weld the corners and that works well.
